Domaine Jean Dauvissat Père et Fils Chablis 2022
Chablis has always been my go-to Chardonnay. I love its clean, mineral feel—no heavy oak weighing it down. It’s crisp, refreshing, and incredibly food-friendly. When I tried this terrific white wine at Shmoné on West 8th Street in New York City, it reminded me why I’m so hooked on this style.
This wine hits all the right notes: zippy citrus, a touch of green apple, and that signature stony minerality. It also has a textural roundness that one expects from Chardonnay, filling the mouth and grounding the wine’s racy acidity.
During dinner, this delicious Chablis handled everything from sweet figs with burrata to earthy mushrooms with ease. Even the bold flavors of pico pasta with artichokes and scallops in tomato butter sauce didn’t come close to overwhelming the wine. Instead, the wine brightened every bite and kept the meal feeling balanced and lively.
Domaine Jean Dauvissat Père et Fils is a winery known for its eco-friendly farming. Fabien Dauvissat, the current owner, transitioned the domaine to organic viticulture in 2014, with the health of his workers and family in mind. He also began incorporating biodynamic practices in 2018, a type of viticulture that can add liveliness to wine.
