Chicken Fajitas with Five Thirst-Quenching Sparkling Rosés

There’s something fun about wrapping sautéed meat and veggies in a tortilla and eating something like a sandwich for dinner. Fajitas are a great example of this casual style of meal preparation — quick and easy; a perfect weekday treat. And, with sheltering in place, every day is feeling like a Tuesday, so tonight could be your night for fun.

These festive fajitas were also perfect for my daughter’s Cinco de Mayo birthday celebration, just four of us at home, but still, it felt like a real party. In fact, the fajitas were so good, she offered to help me make them again a week later.

And what to drink? My go-to beverage with Mexican food is usually beer — cold, carbonated beverages so easily quench a chili pepper-induced thirst. But since summer is practically upon us, why not break out a sparkling rosé? The inherent fruitiness of wine, along with bubbles, will also do the trick. See my wine recommendations following the recipe.

Ingredients

4 tablespoons canola oil, divided

2 tablespoons lemon juice

1-1/2 teaspoons salt

1-1/2 teaspoons dried oregano

1-1/2 teaspoons ground cumin

1 teaspoon garlic powder

1/2 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon crushed red pepper flakes

1-1/2 pounds boneless skinless chicken breast, cut into thin strips

1 medium sweet red pepper, julienned

1 medium green pepper, julienned

1 orange bell pepper, julienned

1 yellow pepper, julienned

2 onions, chopped

2 cloves garlic, peeled and minced, optional

6 flour (or, if you prefer, corn) 8-inch tortillas, warmed

Optional, to serve on side: shredded cheese, shredded lettuce, diced tomatoes, taco sauce, salsa, guacamole, sour cream, or simply avocado mashed with salt and lime.

Instructions

1) In a large bowl, combine 2 tablespoons of the oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. 

2) In a large cast-iron or other heavy skillet, sauté peppers and onions in remaining oil until crisp-tender. Add garlic and sauté for an additional minute. Remove and keep warm. Drain chicken, discarding marinade. In the same skillet, cook chicken over medium-high heat until no longer pink, 5-6 minutes. Return pepper mixture to pan; heat through. 

3) Spoon filling down the center of tortillas; fold in half. Serve with desired toppings.


SPARKLING ROSÉ SUGGESTIONS.

In keeping with the weekday “fun” theme, I’m suggesting wines that are under $35.

Volage Rosé Brut ($30). A classic-method sparkling rosé from the Loire Valley, this Crémant de Loire is low in sugar (3 grams per liter) but high in flavor — think red berries, citrus fruits like blood oranges, with a hint of brioche. You’ll be tickled pink by the persistent and fine bubbles!

Ferrari Rosé ($33). Hailing from the the pure mountain air of Trentodoc, an alpine wine region in Northern Italy, this refined bubbly is made in the traditional method, with more than 20 months aging on its lees. A delicate and beautifully expressive rosé, its aromas and flavors are reminiscent of red berries, orange citrus, almonds and biscotti.

Domaine Bousquet Sparkling Rosé ($13 - a steal!). This organic sparkling wine from Argentina will wow you with its bright flavors, delicate bubbles, and red fruit flavors. Made from a blend of pinot noir (75%) and chardonnay (25%) grown in 4,000 feet high vineyards, this lively sparkling rosé is perfect with spicy fajitas on a hot summer day.

The following wines were sent to me as samples.

Valdo Floral Rosé Brut ($14). You can’t beat this beautiful bottle for summertime celebrations. A ‘Vino Spumante,’ made with grapes grown in Veneto and Sicily (25% Glera, the grape of Prosecco, and 75% Nerello Mascalese), this fresh and elegant sparkling wine has concentrated notes of raspberry and blackberry.

Pink Flamingo Sparkling Rosé ($18). Brought to us by the makers of Pommery Champagne, this bubbly pink, with a fun label, comes from the southern French region of Camargue (home of the oldest breed of horses in the world!). A beautiful salmony color, the wine is made in the traditional method using Chardonnay, Ugni Blanc, and Syrah grapes. With subtle aromas of strawberries and brioche, this delicate sparkling rosé makes a beautiful, savory summer bubbly.
